I’m a bad blogger. Very bad, indeed.

I blame life. And John Lennon.

Ok, what I mean is, it’s like John Lennon said: “Life is what happens while you are busy making other plans.”

He’s right, totally right. Life has been happening to me.

Jeremy did, in fact, tour the condo. A couple times. Then he applied for that mortgage. Then he set a closing date with the bank. The bank then failed to meet that deadline, causing the closing date to be pushed back a month. But Jeremy did successfully close on the condo, eventually. And he successfully moved. We even had a Condo-Warming/Meagan’s Birthday party. The cats are all settled in, as is Jeremy. He’s very happy, and I’m very happy for him.

Speaking of my birthday, I got my permanent crown put on, finally. Now, I just have to go in for a cleaning in April and that’s it for awhile! Yay!

I’ve been doing a lot of cooking at the condo, and some baking, as well. I’ve just been bad at documenting the process so I can blog about it. Hence, I am a bad blogger.

My friend Andrea had her bridal shower this past Saturday. One of the bridesmaids, and a dear friend of mine, Kaity volunteered to make cupcakes for the shower, and asked me to help. How could I pass up the chance to share my baking with so many people? We made three kinds of cupcakes (all box mixes) and 3 kinds of frosting (all homemade).

The pink cupcakes are strawberry cake topped with a marshmallow cream cheese frosting and pink edible pearls. You can find the recipe for this frosting here: http://tastykitchen.com/recipes/desserts/marshmallow-cream-cheese-frosting/

The chocolate cupcakes we topped with a Nutella mocha buttercream frosting and clear sugar crystals. The original frosting recipe did not include mocha flavoring, but I added some instant mocha powder to cut the sweetness of the buttercream a bit. Overall, I think they turned out really well. We got lots of compliments on them. I was glad I could be a part of Andrea’s shower, especially since I won’t be able to attend the wedding.

Well, I think that’s about it for updates right now. I have a few recipes to type up, and then I’m off to bed! In fact, I’m already in my Beatles shirt and in bed typing this. Ah, life. Take care, everyone!
